BURRITO BOWLS

 

INGREDIENTS:

  • 500g premium lean beef mince
  • 1 brown onion diced 
  • Can of corn
  • Can of black beans
  • 1 cup grated cheese
  • 1 punnet cherry tomatoes diced
  • 1 cucumber diced
  • 1 red capsicum diced
  • 1 red onion sliced
  • 1 packet of spinach or 1 iceberg lettuce shredded
  • 4 tbsp tomato salsa
  • 1 avocado
  • Mingle Taco Seasoning
  • 2 cups cooked brown rice

**Serves 4

 

METHOD:

  1. Place brown onion into a pan with some extra virgin olive oil and sauté for 2 minutes
  2. Add mince and cook until browned
  3. Add taco seasoning to mince mixture to desired taste
  4. Place ½ cup cooked brown rice, mince mixture and all desired salad into a bowl. Top with grated cheese and tomato salsa.
  5. Remember we eat with our eyes so making it look pretty is important.
  6. Enjoy
