BANANA AND DATE LOAF

Makes 16 serves

Ingredients

  • ¼ cup honey
  • 1/3 cup extra virgin olive oil
  • ¾ dried dates
  • 2 large bananas
  • 2 eggs
  • ½ cup light milk
  • 2 cups self-raising wholemeal flour

Method

  • 1 Roughly chop dates. Place in a saucepan with ¼ cup of water. Cook over a low heat until water has evaporated. This should make a chunky date paste. Allow to cool.
  • 2 Pre heat oven to 165 degrees.
  • 3 In a small bowl beat the eggs.
  • 4 In a separate large bowl mash bananas.
  • 5 Add olive oil, honey, milk and eggs to bananas. Mix well to combine.
  • 6 Add in flour and gently stir to combine.
  • 7 Place batter in a loaf tin and cook for 50-60 mins.
