This is a healthy and tasty meal perfect for dinner. Recipe serves 6.


  • 1 Large brown onion, chopped
  • 1 clove garlic, crushed
  • 1 small red chilli, thinly sliced
  • 2 tbsp olive oil
  • 500g extra lean beef mince
  • 1 tsp mixed herbs (basil, parsley, oregano)
  • 2x 400g cans crushed tomatoes
  • 1 celery stick, grated
  • 1 zucchini, grated
  • 1 carrot, grated
  • 2 tbsp tomato paste
  • 2 cups fresh baby spinach leaves
  • 500g pasta of your choice
  • Salt and pepper to taste


  • 1 Prepare the pasta according to packet instructions
  • 2 Heat oil in a medium-sized saucepan and add onion and garlic. Gently fry for a few minutes until onion mixture begins to caramelise.
  • 3 Add mince and fry until browned.
  • 4 Add the herbs, tomatoes, vegetables, tomato paste and salt and pepper. Stir until combined.
  • 5 Simmer over a low heat for 30 minutes.
  • 6 In the last minute of cooking, add fresh spinach and stir until combined.
  • 7 Serve with pasta.
