BLENDED VEGETABLE PASTA

Serves 6

Ingredients

  • 1 Medium red capsicum
  • 1/2 butternut pumpkin
  • 2 Tomatoes
  • 1 red onion
  • 3-4 cloves of garlic
  • 100g fetta
  • 1 cup vegetable stock
  • 500g high protein pasta
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp paprika
  • 1/2 tsp chilli flakes
  • Salt
  • Pepper

Method

  • 1 Halve tomatoes, roughly chop capsicum pumpkin and red onion.
  • 2 Place all vegetables on a tray with feta in the middle. Cover with herbs and coat with olive oil.
  • 3 Roast for 40 minutes at 200 degrees.
  • 4 Allow vegetables to cool. Meanwhile, bring a large pot of water to the boil. Cook pasta as per packet instructions.
  • 5 When cooled add vegetables to a blender/ food processor with 1 cup of stock and blend until smooth.
  • 6 Drain pasta and return to the cooking pot, add pasta sauce and stir well to coat all of the pasta with the sauce.
  • 7 (Option to add 600g chicken breast.)
