CAULIFLOWER AND BROWN RICE SALAD

Ingredients

  • 2 packets Macro Organic Brown Rice, Quinoa & Chia Seeds with Garlic 250g
  • 1 packet Craisins
  • 1 Cauliflower head sliced into florets
  • 1 Red onion, diced
  • 3 Spring onion, diced
  • 1 Red capsicum, diced
  • 80g pine nuts
  • 400g corn, drained
  • Juice of 1 lemon
  • Zest 1 lemon
  • Handful of chopped parsley
  • 3 tbsp Extra Virgin Olive Oil (EVOO)
  • Mingle BBQ Seasoning

Method

  • 1 Place the cauliflower florets onto a tray and drizzle with EVOO. Sprinkle with Mingle BBQ seasoning until lightly covered. Place into the oven on 200C for approximately 20 minutes or until golden brown.
  • 2 Microwave the rice as per packet instructions.
  • 3 Place the rice, cauliflower, pine nuts, craisins and all diced ingredients into a bowl and combine. Top with lemon juice, lemon zest, parsley and remaining olive oil.
  • 4 Toss salad and serve.
