2 packets Macro Organic Brown Rice, Quinoa & Chia Seeds with Garlic 250g
1 packet Craisins
1 Cauliflower head sliced into florets
1 Red onion, diced
3 Spring onion, diced
1 Red capsicum, diced
80g pine nuts
400g corn, drained
Juice of 1 lemon
Zest 1 lemon
Handful of chopped parsley
3 tbsp Extra Virgin Olive Oil (EVOO)
Mingle BBQ Seasoning
Method

Place the cauliflower florets onto a tray and drizzle with EVOO. Sprinkle with Mingle BBQ seasoning until lightly covered. Place into the oven on 200C for approximately 20 minutes or until golden brown.

Microwave the rice as per packet instructions.

Place the rice, cauliflower, pine nuts, craisins and all diced ingredients into a bowl and combine. Top with lemon juice, lemon zest, parsley and remaining olive oil.

Toss salad and serve.
