Chicken Pesto Pasta Salad

Serves 6

Ingredients

  • 900g chicken breast, diced
  • 500g packet pasta
  • 1 jar Leggos pesto sauce
  • 60g bag spinach or rocket
  • Punnet of cherry tomatoes, quartered
  • 1 medium cucumber, diced
  • 1 red capsicum, diced
  • 1/2 red onion, diced
  • Handful of basil
  • Parmesan cheese, to serve

Method

  • 1 Cook pasta as per packet instructions. Drain and set aside.
  • 2 Cook chicken on a fry pan using extra virgin olive oil. Cook until chicken is white and cooked through.
  • 3 Prepare vegetables.
  • 4 Combine pasta, chicken, salad and pesto in a large bowl.
  • 5 Top with basil and parmesan cheese.
