CHOPPED VEGETABLE SALAD

If you’re looking for something refreshing and delicious to bring to your next bbq, this salad is the perfect addition! Serve it with your choice of protein and enjoy!

Serves 4-6 people.

 

Ingredients

  • 1 red capsicum
  • 1 punnet cherry tomatoes
  • 1 cucumber
  • 1 red onion
  • 400g can of corn
  • 200g feta
  • 1/2 cup pine nuts
  • 1 avocado
  • Balsamic glaze

Method

  • 1 Dice capsicum, cucumber, tomatoes, avocado and red onion and place into a salad bowl.
  • 2 Dice feta and drain the corn before placing in the salad bowl.
  • 3 Add pine nuts and drizzle with balsamic glaze.
  • 4 Stir the salad until all ingredients are combined and serve with your choice of protein.
