COOKIE DOUGH ICE CREAM

Ice cream is a delicious summer snack or dessert on a warm evening, however can be very high in energy, sugar and fat. Try out this recipe to create a healthier homemade ice cream option.

Ingredients

  • COOKIE BITES:
  • 2 tbsp cashew butter
  • 1 tbsp maple syrup
  • 1 tbsp choc chips
  • Pinch of salt
  • ICE CREAM:
  • 4 cups frozen banana slices
  • ½ tsp ground cinnamon
  • 1 tbsp maple syrup
  • Splash of almond milk

Method

  • 1 Start by making the cookie bites:
  • 2 Mix all the ingredients into a bowl until combined
  • 3 Use ½ tsp to roll into balls (20 bites)
  • 4 Transfer to a plate with baking paper and freeze for 1-2 hours
  • 5 Once cookie bites are done, you can make the ice cream:
  • 6 Place all remaining ingredients into a food processor (add extra milk if bananas are too frozen)
  • 7 Once the ice-cream is nice and thick, take the bites out of the freezer and place ½ into the ice-cream. Pulse for 30 seconds
  • 8 Can eat straight away or place into a bread tin lined with baking paper and freezer for 1-2 hours
  • 9 Serve with remaining cookie dough bites on top
