COTTAGE PIE

Serves 4

Ingredients

  • 750g potato, peeled
  • 1 tbsp milk
  • 2 tsp butter
  • 500g extra lean beef mince
  • 2 tsp olive oil
  • 1tbsp Worcestershire sauce
  • ¼ cup flour
  • 2 tbsp tomato paste
  • 2 cups reduced salt beef stock
  • 1 cup corn
  • 1 cup green peas
  • 1 medium carrot, diced
  • 1 brown onion, diced
  • 2 cloves garlic, crushed
  • 1 large stalk celery, diced
  • 60g tasty cheese, grated

Method

  • 1 Preheat oven to 180°C
  • 2 Peel and dice potato into large chunks. Boil for 15 mins or until soft enough to mash.
  • 3 Meanwhile dice carrot, onion, celery and garlic.
  • 4 Heat a pan with oil and add onion and garlic, cook until fragrant.
  • 5 Add mince and break apart. Add flour and mix through.
  • 6 Add remaining vegetables, tomato paste, Worcestershire sauce and beef stock. Stir to combine and simmer on a low heat for 15 mins or until most of the liquid has reduced into a thick consistency.
  • 7 Mash potatoes adding the milk and butter until it reaches desired consistency.
  • 8 Place mince mixture into a large oven dish topping with mashed potato and cheese.
  • 9 Place into the oven for approximately 15 minutes or until cheese is golden.
