Dice chicken breast. Add half of the herbs, half the olive oil, lemon and crushed garlic. Place to the side.

Cut potatoes into quarters or sixths depending on size, adding the remaining herbs and olive oil. Add salt and pepper to taste. Place in the air fryer or oven for 25-30 mins turning halfway.

Meanwhile prepare salad ingredients and place into bowls.

Heat a medium size pan and cook chicken until white all the way through.

Toast/heat pita.

Arrange all ingredients into a bowl.
