HEALTHIER BANANA BREAD

This recipe is a healthy and delicious alternative to store bought or cafe banana bread. You know exactly what’s going into it – how good!

Recipe makes 1 loaf.

 

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1 cup mashed ripe bananas
  • 2 eggs
  • ½ cup honey
  • ¼ cup skim milk (or milk of choice)
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp ground cinnamon
  • 1 ¾ cups wholemeal flour
  • ½ cup chopped walnuts

Method

  • 1 Pre-heat the oven to 165 degrees Celsius and grease a 9x5 inch loaf pan.
  • 2 In a large bowl, beat the oil and honey together with a whisk. Add the eggs, mashed banana and milk and beat well.
  • 3 Add the baking soda, vanilla, salt and cinnamon and whisk to blend. Stir in the flour and walnuts using a spoon until combined.
  • 4 Pour the batter into your greased loaf pan. Bake for 55-60 minutes or until a skewer comes out clean.
  • 5 Remove from the oven and let stand in the loaf tin for 10 minutes. Remove and place onto a wire rack to cool before slicing.
