Raspberry and Coconut Protein Loaf

Here is a tasty snack or dessert that has plenty of protein and is easy to make.

Ingredients

  • 2 cups rolled oats
  • 1 cup wholemeal flour
  • 2 scoops vanilla protein powder
  • 1 cup honey
  • 1 cup extra virgin olive oil
  • 8 eggs
  • 1 cup desiccated coconut
  • 2tbsp baking powder
  • ½ cup skim milk
  • 200g fresh raspberries

Method

  • 1 Pre-heat the oven to 180 degrees and line a baking dish with baking paper.
  • 2 Combine all ingredients into a bowl (except for the raspberries), and mix until a batter forms.
  • 3 Gently stir through the raspberries.
  • 4 Pour the batter into prepared baking dish and place into the oven for 30 minutes or until a skewer comes out clean.
  • 5 Once cooked, remove a leave to rest for 5 minutes before cutting.
  • 6 Serve by itself or with plain Greek yoghurt.
