TUNA RICE BOWLS

Serves 4

Ingredients

  • 4x cans tuna (used desired flavour)
  • 1 cup brown rice, cooked (or 2x 250g bags microwave brown rice)
  • 1 packet finely shredded slaw
  • 1x continental cucumber, diced
  • 1x avocado, sliced
  • 1 cup edamame, defrosted
  • 2 tbsp low fat kewpie mayonnaise (or sauce of preference)

Method

  • 1 Cook rice or heat microwave pouch.
  • 2 Dice cucumber, slice avocado.
  • 3 Defrost edamame and drain tuna.
  • 4 Assemble all items into a bowl and drizzle mayonnaise on top.
