1 cup brown rice, cooked (or 2x 250g bags microwave brown rice)
1 packet finely shredded slaw
1x continental cucumber, diced
1x avocado, sliced
1 cup edamame, defrosted
2 tbsp low fat kewpie mayonnaise (or sauce of preference)

Cook rice or heat microwave pouch.

Dice cucumber, slice avocado.

Defrost edamame and drain tuna.

Assemble all items into a bowl and drizzle mayonnaise on top.
