TOMATO VEGGIE PASTA

 

INGREDIENTS:

  • 2 cloves of garlic
  • 1 brown onion
  • 1 zucchini
  • 1 red capsicum
  • 200g of mushrooms
  • 200g of sweet potato
  • 400g can Four bean mix 
  • Jar of passata
  • Tin of diced tomatoes
  • 1 red chilli
  • Salt
  • Pepper
  • Olive oil
  • Basil

 

METHOD:

  1. Fry onions and garlic in a little oil until soft ~ 5mins
  2. Add diced sweet potato- cook until soft ~ 10 mins
  3. Add diced zucchini, red capsicum,mushrooms, chilli, salt and pepper- cook until soft ~ 10 mins
  4. Add diced tomatoes, 4 bean mix, passata, sweet paprika, mixed herbs, salt and pepper- until rich and thickened ~ 15 mins
  5. Serve on your favorite pasta with fresh basil 
  6. Enjoy

 

SAM’S TIPS:

Adding a can of 4 bean mix to this recipe provides a source of protein and adds additional fibre. Vegetarian dishes can be lower in protein than meat based dishes if plant based alternatives aren’t included. Protein can aid with feeling full as well as muscle growth or maintenance and recovery.
