Baked Eggs (Shakshuka)

Ingredients

  • 1 can crushed tomatoes
  • 1/2 cup passata
  • 1/2 brown onion, diced
  • 1/2 red capsicum, diced
  • 1/2 zucchini, diced
  • 1 clove garlic, crushed
  • 1 can kidney beans, drained
  • 2 tsp paprika
  • 1 tsp dried basil
  • 1 tsp cumin
  • 1 tsp chilli flakes
  • 4x eggs
  • To Serve: 2x slices seeded sourdough, fresh basil, parsley or coriander and 50g feta

Method

  • 1 Heat a large frying pan with olive oil
  • 2 Add onion and garlic to the frying pan and cook until fragrant
  • 3 Add herbs and combine
  • 4 Add zucchini, capsicum, passata and crushed tomatoes. Combine and cook until slightly soft
  • 5 Add beans and mix to combine
  • 6 Create 4 small wells, cracking an egg into each one
  • 7 Cover with a lid and cook for 5 - 10 minutes, or until egg yolk is the desired consistency
  • 8 Serve with sourdough, fresh herbs and crumbled feta
