ZUCCHINI AND HALOUMI FRITTERS

Looking for a warm and alternative breakfast option? Serve with your choice of eggs, vegetables and toast for a delicious winter breakfast option.

Ingredients

  • 5 zucchini grated
  • 100g smoked ham, torn into pieces
  • 250g haloumi, coarsely grated
  • 2/3 cup self-raising flour
  • 1/3 cup plain flour
  • 2 eggs, lightly beaten
  • 1 chilli, finely diced
  • 2 tbsp extra virgin olive oil
  • 1 cup cannellini beans (canned and drained)

Method

  • 1 Place the grated zucchini in a colander with salt and set aside for 15 minutes. Squeeze the zucchini to remove any excess liquid.
  • 2 Combine the zucchini with the ham, haloumi, flour, egg and chilli in a bowl.
  • 3 In a fry pan, heat extra virgin olive oil and place a spoonful of the mixture in at a time. Flatten with a spatula and cook for 3-4 minutes each side or until golden brown.
  • 4 Remove from the heat and place onto a paper towel. Serve with eggs and vegetables for a delicious breakfast.
