EGG BOATS

Ingredients

  • Oldelpasso Stand N Stuff Mini Tortilla Boats
  • 8 eggs
  • 1 cup grated cheese
  • 1 tsp garlic puree
  • 1 tsp basil puree
  • 6 thin slices of ham (cut in half)
  • Choice of vegetables (choose 3)- grated zucchini or carrot, cherry tomatoes, mushrooms, capsicum.
  • Salt and pepper

Method

  • 1 Preheat the oven to 180 degrees.
  • 2 Place mini tortilla boats on a lined baking tray ready to fill.
  • 3 Whisk eggs, garlic, basil and salt and pepper in a bowl until combined.
  • 4 Place ham on the bottom of the tortilla boats. Proceed to top with a choice of vegetables and a sprinkle of cheese.
  • 5 Pour the egg mixture into the tortilla boats until it is ¾ full.
  • 6 Place in the oven for 15-20 minutes or until golden brown and cooked through.
