Pork steaks are low in fat and a good source of protein. A great change to your usual chicken or steak routine.
270g Soba noodles
2 tbs Extra virgin olive oil
500g Pork Sirloin Steaks, thinly sliced
1 Brown onion, thinly sliced
1 Garlic clove, crushed
1 tsp Finely grated ginger
60ml Teriyaki marinade
2 tbs Soy sauce
1 tbs Rice wine vinegar
350g Mixed vegetables thinly sliced
Cook the noodles in a large saucepan of boiling water following packet directions or until tender. Refresh until cold water, drain well and set aside.
Meanwhile, heat half the oil in a wok or large frying pan over a medium-high heat. Stir-fry the pork in 2 batches. Cooking for 3-4 minutes or until just cooked through. Transfer to a plate.
Heat the remaining oil in the wok over a medium-high heat. Add the onion and stir fry for 2-3 minutes or until onion softens. Add the garlic and ginger and stir-fry for 1 min.
Add the teriyaki marinade, soy sauce and vinegar. Stir-fry for 1 min. Add mixed vegetables and stir fry for 2-3 minutes. Return pork and noodles to the pan. Toss for 1-2 minutes or until combined and heated through.
