PORK AND SOBA NOODLE STIR FRY

Pork steaks are low in fat and a good source of protein. A great change to your usual chicken or steak routine. 

 

Ingredients

  • 270g Soba noodles
  • 2 tbs Extra virgin olive oil
  • 500g Pork Sirloin Steaks, thinly sliced
  • 1 Brown onion, thinly sliced
  • 1 Garlic clove, crushed
  • 1 tsp Finely grated ginger
  • 60ml Teriyaki marinade
  • 2 tbs Soy sauce
  • 1 tbs Rice wine vinegar
  • 350g Mixed vegetables thinly sliced

Method

  • 1 Cook the noodles in a large saucepan of boiling water following packet directions or until tender. Refresh until cold water, drain well and set aside.
  • 2 Meanwhile, heat half the oil in a wok or large frying pan over a medium-high heat. Stir-fry the pork in 2 batches. Cooking for 3-4 minutes or until just cooked through. Transfer to a plate.
  • 3 Heat the remaining oil in the wok over a medium-high heat. Add the onion and stir fry for 2-3 minutes or until onion softens. Add the garlic and ginger and stir-fry for 1 min.
  • 4 Add the teriyaki marinade, soy sauce and vinegar. Stir-fry for 1 min. Add mixed vegetables and stir fry for 2-3 minutes. Return pork and noodles to the pan. Toss for 1-2 minutes or until combined and heated through.
