SWEET POTATO FRITTERS

Try these delicious fritters as a side to your next meal. A great way to add variety to your normal food routine.

Ingredients

  • 1 garlic bulb
  • 100ml Extra Virgin Olive Oil
  • 500g sweet potato, peeled and grated
  • 1 cup almond meal
  • 1 tsp cumin
  • 1 tsp coriander seeds
  • 1 tsp dried chilli flakes
  • 2 eggs
  • ½ cup tahini
  • Juice of 1 lemon

Method

  • 1 Pre-heat the oven to 200 degrees. Place garlic on a sheet of foil and drizzle with olive oil. Wrap the garlic in foil and roast for 1 hour or until soft. Cool, squeeze garlic flesh into a bowl, discard the peel and set aside.
  • 2 Combine sweet potato, spices, almond meal and eggs in a bowl. Heat oil in a pan and make fritters into patties. Flatten with a spatula and cook each fritter for 2-3 minutes each side.
  • 3 Place garlic flesh, tahini, lemon and ¼ cup water in a food processor. Whiz until glossy.
  • 4 Serve the fritters with the garlic tahini and your choice of protein and vegetables.
