WEET-BIX SLICE

A great pre-training or pre-run snack to give you an extra boost of energy. The perfect option to make at the start of the week and have in the fridge ready to go!

Ingredients

  • 10 Weet-Bix
  • 2 cups pitted dates (soaked)
  • 1 cup sunflower seeds
  • 1 cup desiccated coconut
  • 1 scoop chocolate protein powder
  • 4 tbsp honey
  • 4 tbsp water
  • 1 cup dried Montmorency cherries

Method

  • 1 Place all of the ingredients into the food processor, except the water and blitz until it comes together.
  • 2 If the mixture does not come together add 1-2 tbsp water and blitz. Add another 2 tbsp water if the mixture requires it.
  • 3 Line a loaf tin with baking paper and place the mixture into the prepared tin. Press the mixture down and push into the edges.
  • 4 Place in the fridge for 2 hours until set. Slice and keep in the fridge for up to one week.
