VEGETABLE FRITTATA

This is a great high protein snack at work or school

INGREDIENTS:

  • 1 x red capsicum, diced 
  • 4 x button mushrooms, diced
  • 2 cups spinach, diced 
  • ½ red onion, diced 
  • 12 eggs 
  • 2 cups tasty cheese 
  • 1 tsp black pepper

METHOD:

  1. Pre-heat an oven to 180 degrees Celcius and line a baking tray with baking paper 
  2. Crack 12 eggs into a bowl and whisk. Add red onion and pepper 
  3. Add all of the remaining vegetables and stir to combine 
  4. Place the egg mixture into a lined baking tray 
  5. Sprinkle with tasty cheese and place in the oven for 30 minutes or until the egg is cooked 
  6. Once cooled, cut into slices and place in a container in the fridge
